Mixed Bean Casserole with Mediterranean Vegetables
A One pan dish
Mixed Bean Casserole with Mediterranean Vegetables & Vegan Cheddar Cheese
Cut all the vegetables in equal size.
Heat the oil and fry the sliced onions and crushed garlic until soft.
Add the peppers and cook for a further 2 minutes.
Add the aubergines and continue cooking for 2 minutes. Lastly add the courgettes for further 2 minutes.
Add the tomatoes, fresh herbs and mixed beans and combine together.
Season with salt and pepper and place into an oven proof dish.
Grate cheese over the top.
Place in a pre-heated oven 180’c for 30 minutes.
