Pour the flour, Sugar and Butter into a bowl and use your hands to combine the ingredients until the mixture looks like breadcrumbs
Squeeze the mixture until it comes together as a dough
On a lightly floured surface, use a rolling pin to roll the dough to a thickness of 1/2cm. Cut the dough into fingers and place on a lined baking tray, use a fork to create the imprints and then sprinkle with the remaining caster sugar
Chill in the fridge for 20 minutes and then bake for 15-20 minutes until golden brown, remove from the oven and leave to coll for 10 minutes before serving
