Chinese Jackfruit with hoisin and GF pancakes (GF, Vegan)

Ingredients
1 Can Jackfruit
1 Red Onion
1 Clove Garlic
200ml Hoisin Sauce
1 Cucumber - Cut into Matchsticks
3 Spring Onions - Cut into Matchsticks
Splash Vegetable Oil
250g Gluten Free Plain Flour
235ml Hot Boiling Water + 20ml for Adjustment
3 Tablespoons Sesame Oil
Homemade Chinese Pancakes
Directions
Jackfruit
Fry the onion and garlic in a little vegetable oil.
Add the drained jackfruit and half the hoisin sauce.
Cover and cook in a moderate oven (180 degrees) for 30 minutes.
Shred the Jackfruit mixture.
Slice the cucumber and spring onion into fine matchsticks.
Homemade Chinese Pancakes
Mix the ingredients together, once cool enough to handle knead to a smooth dough. Cover and rest for around 20 minutes.
Divide into 18 pieces , form into balls and roll out between 2 piece of greaseproof paper.
Using a large round pastry cutter trim the edges to form neat circles.
Place in hot pan with a little oil and cook until it starts to colour.
Stack the cooling pancakes between layers of greaseproof paper.
When ready to serve steam the stack of pancakes for a couple of minutes. Place the remaining ingredients in individual bowls for guests to help themselves!
