Smashed Avocado and Broad Bean Bruschetta
Smashed Avocado & Broad Bean Bruschetta
Great for a refreshing take on Avocado on toast.
- Firstly boil the broad beans in salted water for 5 minutes. Try not to overcook.
- Remove and drain.
- Add a small amount of chopped mint and drizzle of olive oil and put to one side.
- Slice bread and toast.
- Slice the Avocado and place in a bowl.
- Add Salt and Pepper, a Squeeze of Lemon juice.
- Mix together until a smooth consistence.
- Spread to Avocado onto the toast
- Scatter the Broad Beans over and some more fresh mint.
